Ancho chilies are one of the ‘holy trinity’ of Mexican chilies. Ancho chilies are ripe, dried poblano peppers. They deliver mild heat and complex flavour with hints of raisins and smoke.
Ancho chilies are large with thick walls so they provide lots of body to soups, sauces and adobos. Used alone, or in combination with other Mexican chilies, anchos are the foundation for many adobos, moles, dressings and spices.
These anchos have a wonderful sweet aroma. They’re nice and pliable too. Packaged in a resealable zip-lock pouch these will retain freshness for quite a while.
